Classic Family Favorite

Ingredients

  • Pampered Chef Mini Deep Covered Baker

  • 1 Fennel bulb with fronds removed

  • 1 Red bell pepper, remove stem and core

  • 1 Garlic glove, crushed

  • 1/2 Lemon

  • 1/2 tsp (2mL) salt

  • 1 Zucchini

  • 2 Salmon filets (4–6 oz./125–175 g)

  • Canola oil for spritzing

  • 1/2 tbsp Garlic & Herb Rub

Directions

  • Use the ribbon blade on the Veggie Spiralizer to spiralize the red bell pepper and fennel bulb.
  • Juice the lemon using the Citrus Press.
  • Combine the pepper, fennel, garlic, and lemon juice into the Mini Deep Covered Baker. Mix well. Microwave on HIGH, covered, for 5 minutes.
  • Use the fettuccine blade to spiralize the zucchini and stir into the fennel mixture.
  • Position the salmon filets atop vegetables. Use the Kitchen Spritzer to dress with oil. Coat evenly with Garlic & Herb Rub.
  • Microwave on HIGH, covered, for 6-8 minutes. Leave covered and let rest for 2 minutes.
