Classic Family Favorite

Ingredients

  • Pampered Chef Deep Covered Baker

  • 1 Jalapeño pepper

  • 1 Medium -sized onion

  • 1 Medium-sized green bell pepper

  • 1 lb (450 g) ground turkey (93% lean)

  • 4 Pressed garlic cloves

  • 1/2 tsp (2 mL) of salt

  • 2 cans cannellini beans (15 oz or 398 mL each), drained and rinsed

  • 1 can tomato sauce (14.5 oz or 398 mL)

  • 1 can petite diced tomatoes with garlic and onion (14.5 oz), undrained

  • 3 tbsp (45 mL) Moroccan Seasoning or homemade substitute (below)

  • Homemade Moroccan Seasoning (optional substitute)
  • 1 1/2 tbsp (22 mL) paprika

  • 1 1/2 tsp (7 mL) curry powder

  • 1 tsp (5 mL) sugar

  • 3/4 tsp (4 mL) ground cumin

  • 3/4 tsp (4 mL) each ground ginger

  • 1/2 tsp ground cinnamon

  • 1/4 tsp (1 mL) chili powder

Directions

  • Using the Food Chopper, coarsely chop jalapeño and onion. Using Santoku Knife, dice the bell pepper. Combine and mix the turkey, onion, pressed garlic, peppers, seasoning, and salt in Deep Covered Baker.
  • Microwave on HIGH, covered, for 5-7 minutes, ensuring turkey has no pink. Halfway through the cooking time, use the Mix ‘N Chop to crumble the turkey, finish the remaining cook time.
  • Remove baker from microwave using Oven Mitts. Mix in the tomato sauce, tomatoes, and beans.
  • Microwave on HIGH, covered, for 14-17 minutes or until it reaches a simmer.

  • Nutrition Per Serving: Calories 190, Protein 21 g, Total Fat 5 g, Saturated Fat 1.5 g, Cholesterol 45 mg, Carbohydrate 22 g, Sodium 1320 mg, Fiber 6 g
  • U.S. Diabetic exchanges per serving: 1 starch, 1 vegetable, 2 low-fat meat (1 carb)
  • If desired, 1 1/2 tablespoon (22 mL) paprika, 1 1/2 teaspoon(7 mL) curry powder, 1 teaspoon (5 mL) sugar, 3/4 teaspoon (4 mL) each ground cumin and ground ginger, 1/2 teaspoon of ground cinnamon, and 1/4 teaspoon (1 mL) chili powder can be substituted for the Moroccan seasoning.
  • For an authentic touch, try stirring raisins and diced dried apricots into the chili.
